Gram weights use the King Arthur Baking ingredient weight chart; “—” means the ingredient isn’t on the chart, so measure it by volume or count. Measure flour by spooning it into the cup and leveling, or better, weigh it.

Method

  1. Heat the oven to 350 °F and grease the loaf pan or line it with a parchment sling.
  2. Whisk the flour, baking soda, baking powder, salt and spices in a bowl.
  3. In a large bowl whisk the pumpkin, oil, both sugars and eggs until smooth.
  4. Fold the dry ingredients into the pumpkin mixture just until no streaks of flour remain.
  5. Scrape into the pan and bake 60–70 minutes, until a toothpick in the center comes out clean. Tent with foil after 45 minutes if the top darkens quickly.
  6. Cool 15 minutes in the pan, then turn out onto a rack and cool completely before slicing.

Tips

  • Use plain pumpkin puree, not pumpkin pie filling, which is already sweetened and spiced.
  • Stir in 3/4 cup chocolate chips or chopped walnuts with the flour if you like.
